SUMMARY:Wild Game Preparation & Outdoor Cookery
DESCRIPTION:[vc_row full_width=”stretch_row” el_class=”innerpage-rowgraphic”][vc_column width=”2/3″][vc_column_text el_class=”inner-pagetitle”] \nGet Hands On Experience of Skinning\, Gutting\, Plucking\n[/vc_column_text][vc_column_text] \nYou’ll get up close with fur\, feather and fin as we cover deer\, pigeon and fish. The day will be very much hands on and the course will culminate in you enjoying a freshly cooked game casserole which celebrates the wild animals of the day. \nOn this course we will take you through the process of identifying if your game is fit for consumption\, how to prepare each animal for cooking and use some of the cuts to create simple but hearty campfire meals. We will also discuss the history and uses of the various non meat parts of the animal and talk about the processes our ancestors would have employed to make as much use of the animal as possible. \nThis one day course will give you a solid grounding in using wild game in your cooking\, all against the backdrop of the mixed woodland at Park in the Past. \nYour special guest tutor for this course is bushcraft instructor Pete Morton of Red Oaks Bushcraft. \n[/vc_column_text][vc_column_text] \n\nDiscover the seasons for game; what can be hunted\, when and by whom\nLearn the benefits of eating game for your health and for pest control\nGet confident in knowing whether your game is fit for consumption\nEnsure your game is stored and prepared hygienically outdoors \nBuild knife skills with skinning and gutting\nPrepare a range of game ready for cooking\nUse traditional dutch ovens\, pans and willow frames for cooking\nCreate a delicious game casserole over the campfire\nEnjoy a range of wild game freshly prepared by you and the tutor at basecamp\n\n[/vc_column_text][vc_column_text] \nWood Pigeon: learn about the bird\, how to identify it\, what it eats\, internal organs specific to most birds\, specifics to look out for with birds that have been shot. You will then have a demo of preparing the bird\, first with a knife then without tools before having a turn for yourself. The meat will then be made ready for flash frying with elderberry balsamic vinegar and served in bread rolls with selected greens for your lunch. \nFish: discover how to gut fish with a knife\, how to fillet a fish using just your fingers. Craft and set up a ponassing rig using living willow withies to cook your fish over the fire. \nDeer: learn about the different animals\, their history\, what is gralloching? Then we will work on the skinning and prepare the skin for tanning while some of the group start on the jointing. You will look at selected prime cuts of meat and debone as much as possible\, the bones will be kept for use on other courses (using as much of the animal as possible). \nPlease note; due to the nature of game being wild animals and not farmed we cannot guarantee all the above will be available but if not a suitable substitute will be provided. \n[/vc_column_text][/vc_column][vc_column width=”1/3″] [vc_column_text] \nEvent details\n[/vc_column_text][vc_column_text css=”” el_class=”white-text”]Date: Sat 21st Nov 2026 \nTime: 9:30 am – 4:30 pm \nVenue: Park in the Past \nCost: £85[/vc_column_text]Book now [/vc_column][/vc_row][vc_row][vc_column][vc_single_image image=”31114″ img_size=”full” alignment=”center”][/vc_column][/vc_row][vc_row full_width=”stretch_row” el_class=”row-graphic-white” css=”.vc_custom_1573054760131{background-image: url(https://woodlandclassroom.com/wp-content/uploads/2019/11/background-texture.jpg?id=12328) !important;background-position: center !important;background-repeat: no-repeat !important;background-size: cover !important;}”][vc_column][vc_row_inner content_placement=”middle”][vc_column_inner width=”2/3″][vc_column_text] \nYour Tutor: Pete Morton\n[/vc_column_text][vc_column_text] \n“In 2006 I quit my IT job and set off in a new direction\, to establish Red Oaks Bushcraft with my wife Nichola\, based in the Peak District. I have been involved in the outdoors since becoming a guide at the age of 5 (its a long story\, I will tell you about it when we meet) and working my way through the Peak Park Ranger Service and Mountain Rescue. \nI love my office window now. Bushcraft and wilderness skills are my passion and combining them with a canoe trip makes it even better! \nIt’s not just about learning skills\, it’s about clearing your head and maybe taking a different approach. Far too often we are forced to put our heads down and get the job done. Sometimes you need to stop and take stock. The woodland environment is the perfect place to do this. If you can do this\, learn a new skill or two and have fun you will notice the benefits!” \n[/vc_column_text]Find Out More[/vc_column_inner][vc_column_inner width=”1/3″][vc_single_image image=”31088″ img_size=”full” alignment=”center” el_class=”wd-circle-image”][/vc_column_inner][/vc_row_inner][/vc_column][/vc_row][vc_row full_width=”stretch_row” css=”.vc_custom_1573143170656{background-color: #6c7d4d !important;}”][vc_column][vc_column_text] \nSkills you will learn\n[/vc_column_text][vc_column_text el_class=”cream-text”] \nOver the course of the programme you will learn a range of skills\, including… \n[/vc_column_text][vc_row_inner][vc_column_inner width=”1/4″]\n\n	\nCampfire Cooking [/vc_column_inner][vc_column_inner width=”1/4″]\n\n	\nDutch oven [/vc_column_inner][vc_column_inner width=”1/4″]\n\n	\nTree & Plant identification [/vc_column_inner][vc_column_inner width=”1/4″]\n\n	\nAncestral Skills [/vc_column_inner][/vc_row_inner][vc_row_inner][vc_column_inner width=”1/4″]\n\n	\nNature Connection [/vc_column_inner][vc_column_inner width=”1/4″]\n\n	\nAnimal Identification [/vc_column_inner][vc_column_inner width=”1/4″]\n\n	\nSharp Tool Use [/vc_column_inner][vc_column_inner width=”1/4″]\n\n	\nGame Preparation [/vc_column_inner][/vc_row_inner][/vc_column][/vc_row][vc_row][vc_column][vc_single_image image=”31115″ img_size=”full” alignment=”center”][/vc_column][/vc_row][vc_row el_id=”book-now”][vc_column][vc_column_text] \nBook now\n[/vc_column_text][vc_column_text] \nThis course costs £85 per person and is open to adult learners aged 16 years and over. Adults or families with children of all ages are welcome to join us at our sheltered fire circle hidden in the beautiful woodland of Park in the Past for an early evening session of solstice celebration around the campfire. We will start with a lantern-lit walk along the trail\, across the river and into the woods where our crackling campfire will give us a warm and welcome light at the darkest time of the year. Our previous events have been amazing\, and this year promises to be a very special and magical event with music\, food and good company. \nBe sure to wrap up well with appropriate clothing as old Jack Frost will be out and about.\n\n“We can look back on our journey since Summer Solstice\, to acknowledge what we have completed in this cycle\, what we have experienced and what wisdom we have gained. It is also a moment to look forward\, to name the new seeds and intentions we wish to take into the next cycle.” Glennie Kindred\nLea and James will be your guides as we gather under our huge parachute canopy and share the warmth of the midwinter fire. \nWe are hosting this session on two consecutive nights so if this date fills up\, check out our event on the Sun 21st Dec.[/vc_column_text][vc_column_text] \n\nLantern walk down the trails to the fire circle\nHot spiced apple cider (non-alcoholic)\nFestive fireside storytelling\nWishing Tree\nGentle games for the kids; night-line\, glow worm trail & more\nRoasted chestnuts\nSing-along with seasonal songs; James will bring his mandolin\nLight a candle of your own and make a wish for the coming year\n\n[/vc_column_text][/vc_column][vc_column width=”1/3″] [vc_column_text] \nEvent details\n[/vc_column_text][vc_column_text css=”” el_class=”white-text”]Date: Sat 19th Dec 2026 \nTime: 4:30 am – 6:30 pm \nVenue: Park in the Past \nCost: Adult £15\, Child £12\, Under 3’s Free[/vc_column_text]Book now [/vc_column][/vc_row][vc_row][vc_column][vc_video link=”https://youtu.be/Ca-QG3-nvuQ” align=”center”][vc_column_text]Want a sneak preview of this event? SUMMARY:Identifying Trees in Winter
DESCRIPTION:[vc_row full_width=”stretch_row” el_class=”innerpage-rowgraphic”][vc_column width=”2/3″][vc_column_text css=”” el_class=”inner-pagetitle”] \nWhen you’re out walking\, have you ever wondered\, “which tree is that?” \nOnce the leaves have fallen from the trees\, many people can be stumped when asked what they’re seeing in the woods. But if we can understand the clues trees give us we can unlock their identity and so much more. On this one-day course\, we’ll show you how to identify trees in winter by looking at buds\, bark\, the shape of the tree and other clues. We’ll also look at the different uses that trees have\, their place in the ecosystem and dive into a bit of woodland folklore. You will also take away your very own field guide Winter Trees: A Photographic Guide to Common Trees & Shrubs published by the Field Studies Council. This excellent resource is perfect for continuing your learning and practising tree ID after the course is done. \nJoin James\, who will be your tutor for the day. He has worked for many years in and around trees from managing the largest Community Woodland in Wales (300 acres\, no less) to introducing children to the wonder of woods with his Forest School work. James has also introduced thousands of students to the subject of tree identification through his popular online programme The Complete Tree ID Course. \nAt lunchtime\, share a hot campfire brew together at the woodland fire circle\, sheltered under our big parachute. You’ll be exploring the hedgerows\, mixed woodlands\, wetlands\, and across the open meadows of Park In The Past’s 120 acres of wild space. \n[/vc_column_text][vc_column_text] \n\nGain confidence in identifying a range of common native & naturalised tree species\nIdentify trees when their leaves have fallen\nLearn to use buds\, twigs\, bark\, leaf litter and other winter signs\nDiscover medicinal and edible uses for trees\nUnderstand how trees grow and their value to wildlife\nReceive your own Winter Tree ID Guide\nGet access to a discounted place on The Complete Tree ID Course\n\n[/vc_column_text][/vc_column][vc_column width=”1/3″] [vc_column_text] \nEvent details\n[/vc_column_text][vc_column_text css=”” el_class=”white-text”]Date: Sat 9th Jan 2027 \nTime: 10:00 am – 3:30 pm \nVenue: Park in the Past \nCost: £40[/vc_column_text]Book now [/vc_column][/vc_row][vc_row][vc_column][vc_single_image image=”25177″ img_size=”full” alignment=”center”][/vc_column][/vc_row][vc_row full_width=”stretch_row” el_class=”row-graphic-white” css=”.vc_custom_1573054760131{background-image: url(https://woodlandclassroom.com/wp-content/uploads/2019/11/background-texture.jpg?id=12328) !important;background-position: center !important;background-repeat: no-repeat !important;background-size: cover !important;}”][vc_column][vc_row_inner content_placement=”middle”][vc_column_inner width=”1/3″][vc_single_image image=”29986″ img_size=”full” alignment=”center” el_class=”wd-circle-image”][/vc_column_inner][vc_column_inner width=”2/3″][vc_column_text] \nWinter Trees Guide Included!\n[/vc_column_text][vc_column_text]Everyone attending this course also gets a FREE field guide; British Trees: Winter Signs. Trees must be thinned to grow well and invasive species like bramble have to be managed so that they don’t dominate other plants. \nSo what is coppicing? Well it’s is an ancient form of woodland management\, that involves repetitive felling of the same stump\, near to ground level\, and allowing the shoots to regrow from that main stump. Coppicing creates a variety of micro-habitats within a woodland which become homes for specialised wildlife such as dormice (above) and butterflies. \nCoppicing also produces loads of useful timber products that are still used today. Woodlands that have a reason to be managed\, perhaps for timber\, firewood\, access or green woodworking\, are more likely to receive care and attention long into their future\, and indeed those woodlands that we have today have survived precisely because they have had an economic value to the local community\, “the wood that pays is the wood that stays.”[/vc_column_text][/vc_column_inner][/vc_row_inner][/vc_column][/vc_row][vc_row el_id=”book-now”][vc_column][vc_column_text] \nBook now\n[/vc_column_text][vc_column_text css=””] \nThis course is aimed at adults aged 18 or over. Bushcraft and wilderness skills are my passion and combining them with a canoe trip makes it even better! \nIt’s not just about learning skills\, it’s about clearing your head and maybe taking a different approach. Far too often we are forced to put our heads down and get the job done. Sometimes you need to stop and take stock. The woodland environment is the perfect place to do this. We’ve been learning in nature for thousands of years\, well before we were put in classrooms. In the woods ‘challenging’ behaviour becomes regulated\, usually disengaged learners are inspired and inquisitive minds are fostered. I’ve seen this happen with learners of all ages and it’s a testament to the power of the space you create as an educator. where learners can be themselves and thrive. SUMMARY:Spring Foraging Walk
DESCRIPTION:[vc_row full_width=”stretch_row” el_class=”innerpage-rowgraphic”][vc_column width=”2/3″][vc_column_text css=””] \nWalk a wilder way of living\n[/vc_column_text][vc_column_text css=”” el_class=”inner-pagetitle”]Discover the food growing wild all around you and awaken the ancient knowledge of the hedgerow. \nLong before supermarkets and garden centres\, people knew their local landscape intimately. They knew which young spring leaves could be eaten\, which plants could flavour a meal\, which herbs had traditional medicinal uses\, and where to find an abundance of food growing completely wild. \nMuch of that knowledge has been forgotten\, but the plants are still here. \nJoin us for a half-day guided spring foraging adventure through the beautiful woods\, meadows\, parkland and hedgerows of the National Trust’s Erddig estate. Together\, we’ll go on a wild food treasure hunt\, discovering some of the very best edible plants that spring has to offer. \nYou may be surprised by just how much food is hiding in plain sight. \nWe’ll introduce you to a variety of seasonal wild plants\, showing you how to identify them confidently\, what parts can be eaten and how they can be used in everyday cooking. Along the way\, you’ll also hear about traditional uses\, folklore and some of the medicinal properties associated with our native plants. \nForaging isn’t about surviving on bitter weeds or eating strange plants as a last resort. Once you know what you’re looking for\, the hedgerows can provide fresh greens\, herbs\, flavours\, teas and ingredients that can transform the way you see the countryside. \nThe aim of the walk is to give you the confidence to begin recognising these plants for yourself\, so that future walks through your local woods and hedgerows become opportunities to gather ingredients\, reconnect with the seasons and rediscover a skill our ancestors once took for granted.[/vc_column_text][vc_column_text css=””] \nEdible wild plants are often viewed with suspicion and thought to be bitter or tasteless\, only to be eaten as a last resort. But to the forager\, our woodlands and hedgerows are full of tasty and filling wild food opportunities. \nYou’ll be taking a half day ramble along the hedgerows on the hunt for “food for free” all set against the backdrop of mixed ancient woodlands\, parkland and open meadows of the National Trust’s Erddig estate & gardens\, with over 400 acres of wild space to explore. I have been involved in the outdoors for many years and worked my way through the Peak Park Ranger Service and Mountain Rescue. If you can do this\, learn a new skill or two and have fun you will notice the benefits!” \n[/vc_column_text]Find Out More[/vc_column_inner][vc_column_inner width=”1/3″][vc_single_image image=”31088″ img_size=”full” alignment=”center” el_class=”wd-circle-image”][/vc_column_inner][/vc_row_inner][/vc_column][/vc_row][vc_row full_width=”stretch_row” css=”.vc_custom_1573143170656{background-color: #6c7d4d !important;}”][vc_column][vc_column_text] \nSkills you will learn\n[/vc_column_text][vc_column_text el_class=”cream-text”] \nOver the course of the programme you will learn a range of skills\, including… \n[/vc_column_text][vc_row_inner][vc_column_inner width=”1/4″]\n\n	\nBird Language [/vc_column_inner][vc_column_inner width=”1/4″]\n\n	\nAnimal Identification [/vc_column_inner][vc_column_inner width=”1/4″]\n\n	\nTree & Plant identification [/vc_column_inner][vc_column_inner width=”1/4″]\n\n	\nAncestral Skills [/vc_column_inner][/vc_row_inner][vc_row_inner][vc_column_inner width=”1/4″]\n\n	\nNature Connection [/vc_column_inner][vc_column_inner width=”1/4″]\n\n	\nTrack & Sign [/vc_column_inner][vc_column_inner width=”1/4″]\n\n	\nMindfulness [/vc_column_inner][vc_column_inner width=”1/4″]\n\n	\nReading the Landscape [/vc_column_inner][/vc_row_inner][/vc_column][/vc_row][vc_row el_id=”book-now”][vc_column][vc_column_text css=””] \nYour Day in the Woods\n[/vc_column_text][vc_column_text css=””] \nYour day begins with simple awareness practices\, helping you slow down\, sharpen your senses and attune to the woodland around you. With your perception opened\, you’ll start to notice subtle disturbances in leaf litter\, faint trails through grass and the small but meaningful details that reveal animal presence. \nAs you explore the site\, Pete will guide you through comparing prints from different species\, showing how the shape and structure of an animal’s foot is adapted to its lifestyle. With known badger\, fox and otter activity on site\, there is a strong chance of encountering fresh sign to examine and interpret. \nYou’ll also be introduced to the unmistakable sign of beavers\, including the characteristically gnawed tree stumps along the water’s edge. Bird sign will also be explored\, including feathers\, feeding traces\, tracks\, droppings and pellets\, subtle clues that help reveal the presence and behaviour of the many species that move through the woodland canopy and glades. \nThroughout the day you’ll encounter a variety of animal sign: scat\, hair caught on branches\, feeding traces\, scent marking\, trails and more. If nature chooses not to offer every example\, Pete brings a rich reference collection including feathers\, skulls\, cast prints and scat samples\, ensuring key features can be studied up close. \nLater\, you’ll practise recording your finds using photography\, sketching and plaster casting. These skills not only help you build confidence but create a personal record you can refer back to as you continue tracking on your own. \nBy the end of your woodland immersion\, you’ll walk away with heightened awareness\, a new depth of understanding of your surroundings and the thrilling realisation that the landscape is alive with stories waiting to be read. \n[/vc_column_text][/vc_column][/vc_row][vc_row][vc_column][vc_single_image image=”32974″ img_size=”full” alignment=”center” css=””][/vc_column][/vc_row][vc_row][vc_column][vc_column_text] \nBook now\n[/vc_column_text][vc_column_text css=””] \nThis course costs £75 per person and is aimed at adult learners aged 16 years and over.
