Do you want to take your outdoor cookery skills to a whole new level? Are you ready to wow your friends and family with your campfire cooking over the summer camping season ahead? Join us, as we guide you through a banquet of mouth-watering recipes all of which can be cooked easily outdoors over the campfire.

This one day course looks at a range of inspiring foods that you’ll be able to recreate for yourself. We will learn to prepare and cook; snacks, salads, starters, savoury meals and sweet desserts. All this will take place against the backdrop of our bushcraft basecamp in the beautiful National Trust’s Erddig estate with ancient woodland and open parkland.

This course is perfect for anyone who enjoys the outdoor life, whether it’s camping with the family or your own wild camping trips in the woods. This course would also suit Outdoor Activity Leaders and Teachers who are looking for fresh ideas for cooking outdoors with their groups.

Discover the secrets of Dutch Oven cooking; these backwoods ovens enable you to cook up a huge range of tasty dishes outdoors. We will also take you on a foraging walk for spring greens which can be added to salads, dressings and other healthy dishes.

• Gain confidence in cooking up a variety of foods on the campfire

• Bake fresh bread in a dutch oven

• Learn about the different cooking areas of the fire

• Discover how to manage your fire for quick boils or slow cooks

• Cook up delicious hot desserts like bread & butter pudding

• Find dry firewood in the forest for cooking even when it’s been raining

• Quick & easy alternatives to roasting marshmallows that kids will love

• Cook fish without any pots or pans – no washing up required!

• Cook food in leaves rather than tin foil – nature has the answer.

This course is aimed at adult learners but we do have a few places available for children aged 11+ who would like to attend with an accompanying adult. The day runs from 10am until 4pm and costs £55 per adult. Tickets for accompanied children are just £25. Refreshments are also provided and we’ll be sharing out the food we cook together throughout the day.

About the Tutors

bushcraft skills in north wales

James Kendall is Bushcraft Instructor and Forest School Leader. He has been working in environmental education & conservation for over 10 years now. He received the Bushcraft Competency Certificate awarded through the Institute for Outdoor Learning after 2 years of real experience and practical study. He was also the Project Manager for Long Wood Community Woodland, the largest community-owned woodland in Wales, overseeing the management of 300 acres (120ha) of broadleaf and conifer forest. He is a former Director of Llais y Goedwig, the voice of community woodlands in Wales.

James has always had an affinity with woodland habitats, being at home amongst the trees, and he has made it his mission to study under some of the UK leaders in bushcraft, greenwood crafts and sustainable woodland management including; Dave Watson (Woodland Survival Crafts), Ben Law (woodsman, author, and eco-builder) Patrick Whitefield (permaculture teacher and author) and Mike Abbott (author and greenwood craftsman).

Lea Kendall is a qualified Counsellor and Life Coach. Lea is also a qualified Mindfulness in the Woods practitioner,  and as a Woodland Activity Leader she hosts regular sessions on Wellbeing in the Woods where she leads activities such as foraging for medicinal plants, forest bathing and nature therapy.

“I am a firm believer in the power of nature to be therapeutic for everyone. My training as an Counsellor worked toward my long-term goal to incorporate nature therapy into my services. I am passionate about finding ways to increase the self-esteem of people and encouraging motivation through positive experience, shared enthusiasm and a nurturing environment.”

Erddig lies right on the doorstep of Wrexham town, easily accessible off the A483.

Erddig is home to Grade I listed gardens. Tours are given daily to visitors or you can freely explore the impressive walled garden, now restored to its 18th-century formal design. With rare fruit trees and a National Collection of Ivies, Erddig’s garden is a very special place.
